I've been on fire in the kitchen lately (thank you Pinterest).
Here are some of the recipes I've made, all of which I do recommend:
And the recipe I made for Valentine's Day:
Southwestern Tenderloin Steak
Makes enough for two (except for way too much butter for two..but how do you fourth less than 1 t. lemon zest? ha. can use leftover butter on fish or whatever you want)
DO AHEAD and chill:
For Lime Cream:
1/4 C sour cream
1 T fresh lime juice
big pinch of salt
For butter:
1/2 stick butter-really soft (room temp)
almost 1 T fresh minced fresh parsley
little less than 1 t lemon zest
1 T fresh lemon juice
pinch of salt
combine and chill

For the potatoes:
Boil, Mash and add 1 lb yukon gold potatoes peeled and quartered
1/3 C buttermilk
1 T butter
1-2 t. chipotle peppers in adobe sauce (scrap seeds out for less spicy)-minced really well
salt to taste
add those ingredients to mashed potatoes
For the steak:
in a separate bowl
2 t. brown sugar
3/4 t salt
1 t paprika
1/2 t chili powder
1/2 t pepper
mix together
rub mixture on beef tenderloin fillets (enough for two)
push rub all over into meat
heat 1 T EVOO in sauté pan over med high heat
sauté two to three minutes per side for med rare (depends on how thick though)
put in bowl set aside (with juice) put foil over to keep warm
For Spinach:
same pan
add 1 T EVOO
1/2 C grape tomatoes
8 C spinach leaves
heat-cook tomatoes till blister then spinach till wilted
add salt and pepper to taste
To assemble:
Divide potatoes between two plates
top with cream mixture
arrange spinach and tomatoes on potatoes
layer steaks on top
1 t. butter mix on top




Those looks amazing! why were we baking cakes when we could have been making that!
